Handcrafted by wildly talented chef Gaspar Tse, this sauce brings together a traditional XO base of aromats including ginger, garlic, chillies and shallots, slowly cooked over a few hours. A blend of fermented black garlic and mushrooms (YUM) are then added to create an XO that is spectacular on absolutely anything. You name it. Gaspar recommens chucking some into a pan
