70% Big Island Hawaii Dark Chocolate Drinks & Baking Our 60% dark milk chocolateI met Susan Bassett of Mauna Kea Cacao while judging raw cacao at the Big Island Chocolate Festival. Her beans were some of the highest scoring at the event, so I made a point to visit the farm while I was there. Seeing how the cacao is grown, fermented, and dried on the Big Island made it an easy decision to bring some back and make a single batch. That first run turned out to be something special. This 70% dark chocolate is made from that same
